Navigate to Appearance -> Customize -> Page settings. Here you can choose page layout settings, that work globally.
Specific page layout on individual pages
You can also choose a specific layout on individual pages, using meta settings. Edit the page where you want to choose a different layout and scroll down to layout settings. After the page is saved, this option will override global settings.
