To modify header settings navigate to Appearance -> Customize -> Header. Here you can choose header layout settings, which works globally on all your pages.
Specific header on individual pages
You can also choose specific headers on individual pages, using page metaboxes. Edit the page where you want to choose different header and scroll down to header settings. After the page saved, this option will override global settings.
