Page layout can be set individually for blog, archives, regular pages and shop pages. Navigate to Appearance -> Customize -> Layout. Here you can choose page layout settings, which works globally.
Specific page layout on individual pages
You can also choose specific layout on individual pages, using Layout Settings metabox. Edit page where you want to choose different layout and scroll down to layout settings. After the page is saved, this option will override global settings.
